Casale Cardone

Set in the heart of Puglia’s beautiful Canale di Pirro countryside, Casale Cardone offers an authentic farm-to-table dining experience in a lovingly restored 15th-century farmhouse. Family-run by the Cardone family, this historic masseria celebrates the region’s agricultural heritage while embracing a sustainable future.

The family are passionate custodians of ancient Senatore Cappelli wheat, growing and milling it on their farm to create traditional handmade pasta that showcases the flavours of Puglia. Every dish is prepared by talented young chefs using seasonal ingredients sourced locally, accompanied by wines from native vineyards across the Itria Valley. Even the estate’s own raw honey comes from its apiaries, adding another taste of the surrounding landscape.

Sustainability is woven into every aspect of Casale Cardone. Organic waste is composted, natural and reclaimed materials are used throughout the property, and the restaurant’s commitment to local sourcing helps support nearby farmers and producers while reducing its environmental impact.

Beyond the dining experience, the family works closely with local schools, welcoming children to learn about traditional farming, biodiversity and sustainable food production. By dining here, you’ll enjoy exceptional regional cuisine while supporting a family business dedicated to preserving Puglia’s culinary traditions, protecting its rural landscape and inspiring future generations to value their agricultural heritage.
